2. Beat the cream cheese with sugar. Add condensed milk, lemon juice, zest and vanilla.

• a dash of sweet paprika
• ¼ cup breadcrumbs

1. Thaw the spinach and drain to remove excess water. Wrap into a towel and then squeeze out the water. Rough chop the spinach leaves.
2. In a large saucepan, boil the flowerets in vegetable stock. Simmer for 10 minutes until tender.
3. Drain to remove excess water. When cooled pour it over a food processor and add the cream cheese, salt and pepper, butter and chopped spinach leaves.
4. Grease a casserole with butter and pour in the spinach and cauliflower mixture. Top with chives and breadcrumbs. Sprinkle with ham bits on top. Dust with paprika.
